Amaranth Flour
Amaranth Flour is an excellent ingredient for gluten free baking. Amaranth is extremely nutritious and contains no gluten. It is rich in iron, calcium and is high in amino acids, methionine, lysine and cysteine. Amaranth is loaded with fiber and contains many other vitamins and minerals. Use amaranth in soups and granolas or as a side dish. It is a delicious small bead like grain that can be toasted or milled for extra flavor. Like other seeds amaranth should be cooked before eating as it contains compounds that can inhibit the proper absorption of nutrients. You can also cook and eat the leaves of the plant as greens. Amaranth as a flour, seed or green is extremely nutritious and gluten free!
