Arrowroot powder is used as a thickening agent in soups, sauces and in baking. It is a gluten free alternative to other thickening agents. Arrowroot is also a great substituted for cornstarch, it's gel is clear and has no flavor. It thickens as a lower temperature than cornstarch or wheat, however, it does not hold as long after cooking. Arrowroot is nutritious and easy to digest. It is known to soothe the stomach and helpful for diarrhea. In fact, arrowroot biscuits are one of the first solid foods babies are able to eat. If you buy biscuits and you are allergic to gluten or desire gluten free foods check the label as many manufacturers add wheat flour.
