Quinoa Flour / Quinoa
Quinoa flour is an excellent gluten free substitute for recipes which call for white flour. Also called Hie. People in the South America Andes have cultivated quinoa since 3000 B.C The National Academy of Science states, quinoa as "the nearly most perfect source of protein from the vegetable kingdom". It is loaded lysine and other amino acids which make it a complete protein. High in fiber, phosphorus, iron, calcium, vitamin E and B. Quinoa is usually yellow, however, it can be found in red, orange, pink, purple and black. A great gluten free substitute (for rice or pasta) with any meal. Rise the grains prior to cooking.
